Instructions
Make the Filling
Heat a large skillet over medium heat. Add sofrito, garlic, and tomato sauce. Cook for 2-3 minutes, until fragrant.
Add ground beef and season with sazón, adobo seasonings, cumin, oregano and red pepper flakes. Cook, breaking up meat, until browned. Remove from heat and let cool.
Assemble the Empanadas
Place 1 tablespoon of filling in the center of empanada dough disc. Fold dough over the filling to form a half-moon shape. Press edges together and seal with tines of a fork.
Repeat with remaining dough, placing filled empanadas on a parchment lined sheet pan.
Frying the Empanadas
Heat 1-2 inches of oil in a deep skillet or wok over medium-high heat (325-350℉).
Fry 2-3 empanadas at a time, without overcrowding. Cook for 1-2 minutes per side, until golden brown and crispy.
Transfer to a paper towel-lined plate to drain. Repeat with remaining empanadas.
