Citrus and Rum Marinated Shrimp Skewers

Plump juicy shrimp skewers are marinated with citrus, rum, garlic and oregano to give this quick and easy meal a tropical Puerto Rican vibe.

Ingredients
  

  • 1 orange zest and juice
  • 1 lime zest and juice
  • 1 tsp sugar
  • ¼ cup olive oil light
  • ¼ cup dark rum
  • 4 cloves garlic finely chopped
  • 2 tsp fresh oregano chopped
  • tsp kosher salt
  • ½ tsp ground pepper
  • 2 lbs large shrimp 26-30 count peeled and deveined

Instructions
 

  • Prep - Place wooden skewers in a long dish and cover with water to soak for 30 minutes. If broiling, line a broiler pan or sheet pan with foil (easy clean up) and spray rack with cooking oil.
  • Marinate - In a large bowl, combine the orange and lime zests, juice, sugar, oil, rum, garlic, oregano, salt and pepper. Add the shrimp and stir to combine. Marinate for 20-30 minutes.
  • Skewer - Prepare skewers by threading 5-6 shrimp onto each skewer. Skewer should go through both the top and bottom of the shrimp, forming a C-shape, so they are easy to turn over when broiling or grilling.
  • Broil - Set the oven rack 4-6 inches from heating element and preheat on the Broil mode. Place shrimp skewers on prepared broiler pan or sheet pan with wire rack. Place in the oven and broil for 5 minutes, turning skewers over half way through.

Notes

Instructions if you prefer to Grill - Preheat grill to medium high (400°F). Place skewers on prepared grates (cleaned and oiled). Cook for 1½-2 minutes per side or until shrimp are cooked through and opaque.
